100 Day Anniversary

Steven and I enjoyed discovering delicious Ethiopian cuisine on our 2 month anniversary . . . so for our 100 day anniversary, we decided to try and make some Ethiopian food! Though we didn’t have all the right spices (lacking coriander, turmeric, and ginger) every thing still tasted delicious.

We had stumbled across a little Ethiopian market the other day and picked up some Ingera. Tonight, we put together some Amhari (thick veggie stew), Spiced Chard (used this recipe as inspiration, but it was quite different as we didn’t have most of the ingredients . . . we used swiss chard and spinach and no cheese  . . . next time we’ll try the collard greens), and Dorowat (this was delicious; it would be good served over rice too!). With Quofer served alongside (cultured kefired-colostrum from Organic Pastures), it was the perfect meal.

Mmm. A fun way to remember 100 days of marriage! God is so good. : )

A first ride on the Lightrail

Steven took Rebecca on her first lightrail ride while traveling towards downtown. This is much easier than driving and parking!

After a month of adventures, Steven and Rebecca are back settling in their home state. God is good and we are overjoyed at His goodness. Thanks for your prayers and support making our wedding day so incredibly special!! We continue to treasure your prayers as we set purposeful patterns of a Christ honoring family culture.
